  • 45 black tea bags (Assam or English Breakfast)
  • 1/2 cup pumpkin puree (100% pure, not pie filling)
  • 1/4 cup maple syrup
  • 2 tablespoons brown sugar (packed, light or dark)
  • 2 teaspoons ground cinnamon (Ceylon preferred)
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Steep the tea: Bring 4 cups of water to a boil in a saucepan. Remove from heat, add tea bags, and steep for exactly 5 minutes. Remove tea bags and gently squeeze them over the pot.
  2. Whisk in pumpkin and sweeteners: Return pot to medium-low heat. Add pumpkin puree, maple syrup, and brown sugar. Whisk continuously until fully dissolved and smooth, about 2 minutes.
  3. Add spices: In a small bowl, mix cinnamon, ginger, cardamom, cloves, and salt. Add to pot and whisk. Simmer gently for 1 minute until spices bloom.
  4. Simmer and reduce: Turn heat to low and simmer gently for 10 minutes, stirring occasionally. Do not let it boil. The liquid will darken and thicken slightly.
  5. Add vanilla and strain: Remove from heat. Stir in vanilla extract. Let cool for 2 minutes, then pour through a fine-mesh strainer into a glass jar or bottle. Strain twice for extra smoothness.
  6. Cool and store: Let concentrate cool to room temperature (about 30 minutes) before sealing. Refrigerate for up to 2 weeks.

Don’t over-steep the tea (5 minutes max) to avoid bitterness. Bloom spices for vibrant flavor. Use a whisk to incorporate pumpkin puree smoothly. Strain twice for silky texture. The concentrate keeps for 2 weeks in the fridge and flavors deepen after a day. For a hot latte, mix 1/4 cup concentrate with 3/4 cup milk and heat. For iced, pour over ice with cold milk.
