  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup sour cream, divided
  • 1/2 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional)
  • Assorted dippers: tortilla chips, crusty bread cubes, pretzel sticks, or fresh veggie sticks

Instructions

  1. Preheat your oven to 375°F (190°C). Take cream cheese out of the fridge to soften for at least 30 minutes.
  2. Thaw frozen spinach and squeeze dry using a clean kitchen towel until barely any moisture remains.
  3. In a medium bowl, combine softened cream cheese, 1/4 cup sour cream, and mayonnaise. Stir until smooth and creamy.
  4. Fold in mozzarella, Parmesan, minced garlic, black pepper, salt, and red pepper flakes (if using). Mix until evenly distributed.
  5. Fold in the squeezed-dry spinach gently but thoroughly, ensuring no dry pockets remain.
  6. Transfer mixture to an oven-safe baking dish and spread into an even layer. Smooth the top with a spatula.
  7. Bake for 20-25 minutes, until hot and bubbly around the edges and the center is just set.
  8. While dip bakes, prepare the spiderweb: place remaining 3 tablespoons sour cream in a piping bag or zip-top bag. Snip a tiny corner off.
  9. Let baked dip cool for 2-3 minutes. Pipe a small circle in the center, then concentric circles around it, spaced about 1 inch apart.
  10. Using a toothpick or knife tip, drag lines from the center outward through all circles to create a web effect. Wipe toothpick clean between each line.
  11. Serve immediately with assorted dippers.

Notes

Don’t skip cooling the dip before piping the sour cream web, or it will melt. Squeeze spinach very dry to avoid watery dip. For best results, use room temperature cream cheese. Can be assembled ahead (without web) and refrigerated; add 5 minutes to bake time.
