  • 1/2 cup low-sodium soy sauce
  • 1/3 cup honey
  • 1 tablespoon rice vinegar

  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon ground ginger
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds, toasted (for garnish)
  • Cooked white rice or brown rice (for serving, optional)
  • Steamed broccoli or snap peas (for serving, optional)
  • Extra sriracha or chili crisp (for serving, optional)

Instructions

  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil (if using), red pepper flakes, and ground ginger. Set aside.
  2. Place a large skillet over medium-high heat. Add olive oil and let it shimmer for about 30 seconds.
  3. Add ground turkey to the skillet. Break it up with a wooden spoon into small crumbles. Cook undisturbed for 2-3 minutes to brown, then stir and continue cooking for 4-5 minutes until no longer pink.
  4. Push turkey to one side of the pan. Add minced garlic to the empty space and cook for about 30 seconds until fragrant. Stir into the turkey.
  5. Whisk the sauce mixture again, then pour over the turkey. Stir to coat. Bring to a gentle simmer.
  6. Let simmer for 3-4 minutes, stirring occasionally, until sauce thickens and becomes glossy. If too thin, simmer another minute; if too thick, add a splash of water.
  7. Taste and adjust seasoning: add more soy sauce for salt, honey for sweetness, or red pepper flakes for heat.
  8. Remove from heat. Garnish with sliced green onions and toasted sesame seeds. Serve immediately over rice with steamed vegetables if desired.

Notes

Use low-sodium soy sauce to control saltiness. For gluten-free, substitute tamari or coconut aminos. Ground chicken, pork, or beef can replace turkey. Toast sesame seeds in a dry pan for 1-2 minutes for extra flavor. Leftovers keep in the fridge for up to 4 days and freeze for up to 3 months.
