Ingredients

Scale
  • 2 cups (250g) All-Purpose Flour
  • 1/2 cup (100g) Granulated Sugar
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Ground Ginger
  • 1/4 teaspoon Nutmeg
  • 1/2 cup (115g) Unsalted Butter, very cold and cubed
  • 1/2 cup (120g) Pumpkin Puree
  • 1 large Egg, room temperature
  • 1 teaspoon Vanilla Extract
  • 1 cup (120g) Confectionersโ€™ Sugar (for glaze)
  • 12 tablespoons Milk (for glaze)
  • 1/4 teaspoon Cinnamon (for glaze)
  • A pinch Nutmeg (for glaze, optional)

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter, two forks, or your fingers to work the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter remaining.
  4. In a separate small bowl, whisk together the pumpkin puree, egg, and vanilla extract.
  5. Pour the wet mixture into the dry ingredients. Gently mix with a spatula or hands until the dough just comes together. Do not overmix; the dough should be shaggy and sticky.
  6. Turn the dough out onto a floured surface and pat it into a 1-inch thick circle.
  7. Cut the circle into 8 wedges and place them on the prepared baking sheet.
  8. Bake for 15-18 minutes, or until golden brown on top and cooked through.
  9. While baking, prepare the glaze by whisking together confectionersโ€™ sugar, milk, cinnamon, and nutmeg until smooth.
  10. Let scones cool on the baking sheet for 5 minutes, then drizzle the glaze over the warm scones.
  11. Enjoy warm.

Notes

Ensure butter is very cold to create flaky layers. Do not overmix the dough to avoid tough scones. Use 100% pure pumpkin puree, not pumpkin pie filling. For gluten-free, use a 1:1 gluten-free baking blend. For dairy-free, use plant-based butter and milk.
