A cozy blackberry cobbler with a golden, biscuit-like topping and juicy blackberry filling, perfect for chilly nights and served best with creamy vanilla bean ice cream.

Ingredients

Scale
  • 4 cups fresh or frozen blackberries
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest (optional)
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cornstarch
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • 1/3 cup whole milk (or almond milk for dairy-free)
  • 1 teaspoon vanilla extract
  • Vanilla bean ice cream for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, gently toss together blackberries, sugar, lemon juice, lemon zest, cinnamon, and cornstarch until berries are evenly coated.
  3. Transfer the berry mixture to a 9×9-inch baking dish and spread evenly.
  4. In a separate bowl, whisk together flour, sugar, baking powder, and salt.
  5. Add cold, cubed butter to the flour mixture and cut it in with a pastry cutter or fork until the mixture resembles coarse crumbs.
  6. In a small bowl, combine milk and vanilla extract, then pour into the flour and butter mixture. Stir just until combined and no dry flour remains.
  7. Drop spoonfuls of the topping evenly over the blackberry filling, allowing some berries to peek through.
  8. Bake for 35-40 minutes until the topping is golden brown and the filling is bubbling. Tent with foil if topping browns too quickly.
  9. Let the cobbler cool for at least 15 minutes to thicken the filling.
  10. Serve warm topped with a generous scoop of creamy vanilla bean ice cream.

Notes

Keep butter cold to ensure a flaky topping. Do not overmix the topping batter to avoid toughness. If topping browns too fast, tent with foil. Let cobbler rest after baking to thicken filling. Frozen blackberries should be thawed and drained to avoid watery filling. For gluten-free, substitute flour with almond or coconut flour and use dairy-free milk and butter alternatives for dairy-free version.
