Ingredients

  • Whole chicken: about 3.5 to 4 pounds (1.6 to 1.8 kg), fresh or thawed
  • Olive oil: 2 tablespoons, for coating
  • Salt: 1 tablespoon kosher salt
  • Black pepper: 1 teaspoon freshly ground
  • Paprika: 1 teaspoon
  • Dried thyme: 1 teaspoon (or 1 tablespoon fresh, finely chopped)
  • Dried rosemary: 1 teaspoon, crushed
  • Garlic powder: 1 teaspoon
  • Onion powder: 1 teaspoon
  • Lemon: 1 whole, halved (optional)
  • Fresh parsley: a small handful, chopped (for garnish)

Instructions

  1. Remove any giblets from the cavity and pat the chicken dry with paper towels.
  2. Use kitchen twine to tie the legs together and tuck the wing tips under the body.
  3. In a small bowl, mix olive oil, salt, pepper, paprika, thyme, rosemary, garlic powder, and onion powder. Rub this mixture all over the chicken, including under the skin and inside the cavity.
  4. Place the lemon halves inside the cavity.
  5. Secure the chicken tightly on the rotisserie spit, ensuring it is balanced.
  6. Preheat grill for indirect medium heat (around 350°F/175°C).
  7. Place the spit on the rotisserie and cook for about 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  8. Carefully remove the spit and let the chicken rest for 10-15 minutes before carving.
  9. Slice the chicken into portions and garnish with fresh parsley. Serve hot.
