Instructions

  1. Pour 4 cups of spiced apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced by 75% (about 1 cup of thick, syrupy liquid). This takes 25-30 minutes. Let cool completely.
  2. Preheat oven to 350ยฐF (175ยฐC). Generously grease a 10-12 cup Bundt pan with butter or non-stick spray, ensuring all crevices are coated. Dust with flour, tapping out excess.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
  4. In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
  5. Add eggs one at a time, beating well after each addition. Scrape down bowl sides. Add 2 teaspoons vanilla extract and mix until combined.
