  • 6 tablespoons (85g) unsalted butter, melted

  • Cinnamon sugar coating:
  • ยฝ cup (100g) granulated sugar
  • 1 tablespoon ground cinnamon
  • 3 tablespoons (45g) unsalted butter, melted

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Line a 12-cup muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until well combined.
  3. In a separate medium bowl, beat the granulated sugar and melted butter together until smooth. Add eggs one at a time, whisking well after each addition.
  4. Stir in the apple cider and vanilla extract to the wet mixture.
  5. Pour the wet ingredients into the dry ingredients and fold gently with a spatula until just combined. The batter will be slightly lumpy.
  6. Divide the batter evenly among the 12 muffin cups, filling each about ยพ full.
  7. Bake for 18โ€“22 minutes, checking at 18 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  8. While baking, mix the cinnamon sugar coating by combining granulated sugar and ground cinnamon in a shallow bowl. Melt the butter in another bowl.
  9. When muffins are done, let them cool in the pan for 5 minutes, then transfer to a wire rack.
  10. While muffins are still warm, brush each with melted butter and roll in the cinnamon sugar mixture until well coated.
