A nostalgic and easy-to-make birthday cake recipe that captures the classic flavor and soft, tender crumb of childhood celebrations. Perfect for any occasion and ready in under 30 minutes.

Ingredients

Scale
  • 2 ½ cups (320g) all-purpose flour, sifted
  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¾ cups (350g) granulated sugar
  • ½ cup (115g) unsalted butter, softened
  • ¼ cup (60ml) vegetable oil
  • 3 large eggs, room temperature
  • 1 cup (240ml) whole milk or dairy-free milk
  • 2 teaspoons pure vanilla extract
  • ½ cup (80g) sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch pan by greasing it with butter and lining with parchment paper.
  2. In a large bowl, sift together the flour, baking powder, baking soda, and salt. Whisk to combine evenly.
  3. In another bowl, beat the softened butter and granulated sugar with an electric mixer or whisk until light and fluffy, about 3 to 4 minutes.
  4. Add eggs one at a time, mixing well after each addition until the batter is smooth and glossy.
  5. Stir in vegetable oil, whole milk, and vanilla extract until well incorporated.
  6. Fold the dry ingredients into the wet mixture in thirds, folding gently with a spatula until just combined. Do not overmix.
  7. Fold in sprinkles if using, gently to avoid color bleeding.
  8. Pour the batter into the prepared pan and smooth the top with an offset spatula or spoon.
  9. Bake for 35 to 40 minutes, checking doneness with a toothpick starting at 30 minutes. The toothpick should come out clean or with a few moist crumbs.
  10. Let the cake cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely before frosting or slicing.

Notes

If cake edges brown too fast, cover loosely with foil halfway through baking. Use room temperature eggs and softened butter for best texture. Avoid overmixing to keep cake tender. An oven thermometer helps ensure accurate baking temperature. Dry mix can be prepared ahead and stored for up to 2 weeks.
