  • ¾ cup (96 g) all-purpose flour
  • ½ cup (100 g) packed light brown sugar
  • ¼ cup (50 g) granulated sugar
  • ¾ cup (85 g) chopped pecans, lightly toasted
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the middle.
  2. Brown the butter: Place the ½ cup unsalted butter in a large skillet or saucepan over medium heat. Let it melt completely, then continue cooking, swirling the pan occasionally. The butter will foam up, then settle down. Watch closely until it turns a deep amber color and has a nutty aroma, about 5-7 minutes. Remove from heat immediately and pour into a heatproof bowl to stop the cooking.
  3. Prepare the apple filling: In a large mixing bowl, combine the sliced apples, ⅓ cup granulated sugar, 2 tablespoons brown sugar, 2 tablespoons flour, 1 tablespoon lemon juice, 1 ½ teaspoons cinnamon, ¼ teaspoon nutmeg, 1 teaspoon vanilla, and ¼ teaspoon salt. Toss everything together until the apples are evenly coated. Let it sit while you make the streusel.
  4. Make the oat pecan streusel: In a separate bowl, whisk together the ¾ cup oats, ¾ cup flour, ½ cup packed brown sugar, ¼ cup granulated sugar, 1 teaspoon cinnamon, and ½ teaspoon salt. Pour the slightly cooled brown butter over the dry ingredients. Add the ¾ cup chopped pecans. Stir with a fork or your fingers until the mixture looks like wet sand with some clumps. Don’t overmix.
  5. Assemble the crisp: Pour the apple mixture into a greased 9×13-inch baking dish. Spread it into an even layer. Sprinkle the streusel topping evenly over the apples. Don’t press it down.
  6. Bake for 40-45 minutes. The crisp is done when the topping is golden brown and the apple juices are bubbling around the edges. If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
