  • 6 thick slices sturdy bread (brioche, challah, or country loaf), day-old preferred
  • 2 tablespoons butter or oil for frying (30 g)

  • Powdered sugar for dusting (optional)

Instructions

  1. Pour 1 cup (240 ml) of whole milk into a small saucepan and heat gently over medium heat until warm but not boiling (about 140°F/60°C). Remove from heat, add 2 chamomile tea bags, cover, and steep for 10 minutes. Remove tea bags and press gently to extract flavor. Let milk cool slightly.
  2. In a shallow wide bowl, whisk 3 large eggs until smooth. Add chamomile-infused milk, 1 tablespoon honey, 1 teaspoon vanilla extract, 1/4 teaspoon cinnamon (if using), and a pinch of salt. Whisk until fully combined.
  3. Heat skillet or cast iron pan over medium heat. Dip each slice of bread into the custard mixture, soaking about 20 seconds per side. Let excess drip off.
  4. Add 1 tablespoon butter or oil to the pan. Cook soaked bread slices 3-4 minutes per side until golden brown and slightly crisp. Adjust heat as needed to avoid burning.
  5. Serve warm with extra honey drizzled on top, dust with powdered sugar if desired, and add fresh berries or fruit on the side.

Notes

Steep chamomile tea bags in warm milk for at least 10 minutes to extract full flavor. Use day-old thick bread like brioche or challah for best custard absorption without sogginess. Cook on medium heat to avoid burning. For dairy-free, use almond or oat milk and steep similarly. To keep multiple slices warm, place in a 200°F (95°C) oven while finishing cooking.
