Cozy Cheeseburger Potato Soup

A warm, comforting slow cooker soup with classic cheeseburger flavors and tender potatoes, made with just five simple ingredients.

  • 1 pound ground beef (80/20 lean)
  • 4 cups diced russet potatoes (about 600g or 1.3 lbs)
  • 2 cups shredded sharp cheddar cheese (about 200g)
  • 4 cups beef broth (960ml, low-sodium recommended)
  • 1 teaspoon onion powder

Instructions

  1. Brown the ground beef in a skillet over medium-high heat until no longer pink, about 5-7 minutes. Drain excess fat and transfer to the slow cooker.
  2. Peel and dice potatoes into 1-inch cubes and add on top of the browned beef in the slow cooker.
  3. Pour in beef broth to cover the potatoes and beef.
  4. Sprinkle onion powder evenly over the ingredients and stir lightly to combine without mashing the potatoes.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until potatoes are tender.
  6. About 15 minutes before serving, add shredded cheddar cheese and stir until melted and creamy.
  7. Taste and season with salt and pepper as needed.
  8. Serve warm, optionally with crusty bread or a side salad.

Notes

Brown the ground beef first to drain excess fat and avoid greasy soup. Cut potatoes uniformly for even cooking. Add cheese near the end to prevent clumping. If soup is too thick, add broth or water to adjust consistency. Can be made in a Dutch oven on stove by simmering gently for about 45 minutes.
