Cozy Cheesy Ground Beef and Potato Casserole

A quick and comforting casserole featuring browned ground beef, tender sliced potatoes, and a blend of sharp cheddar and mozzarella cheeses, ready in just 45 minutes.

  • 1 lb ground beef (80/20)
  • 4 medium russet potatoes (about 1.5 lbs), peeled and thinly sliced
  • 1 ยฝ cups shredded sharp cheddar cheese (about 6 oz)
  • 1 cup shredded mozzarella cheese (about 4 oz)
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced (or 1 tsp garlic powder)
  • ยฝ cup beef broth (low sodium preferred)
  • ยฝ cup sour cream (or Greek yogurt)
  • 2 tbsp unsalted butter, softened
  • 1 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp smoked paprika
  • ยฝ tsp dried thyme

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Lightly grease a 9×13-inch baking dish with butter or cooking spray.
  2. Peel and slice the russet potatoes into thin rounds (about 1/8 inch or 3 mm thick). Rinse in cold water to remove excess starch, then pat dry.
  3. Heat olive oil in a large skillet over medium heat. Add chopped onions and sautรฉ until translucent, about 3-4 minutes. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Add the ground beef, breaking it up with a spatula. Cook for 6-8 minutes until browned and no longer pink. Drain excess fat if needed.
  5. Season the beef mixture with salt, black pepper, smoked paprika, and dried thyme. Pour in the beef broth and simmer gently for 2 minutes. Remove from heat and stir in the sour cream.
  6. Layer half of the sliced potatoes in the bottom of the prepared baking dish, slightly overlapping. Spoon half of the beef mixture evenly over the potatoes. Sprinkle with half of the cheddar and mozzarella cheeses.
  7. Repeat the layering with the remaining potatoes, beef mixture, and cheeses.
  8. Dot the top with small pieces of butter.
  9. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until cheese is bubbling and golden brown and potatoes are tender.
  10. Let the casserole rest for 5 minutes before serving.

Notes

If cheese browns too quickly, tent loosely with foil. Add extra beef broth if casserole seems dry before baking. Use a mandoline for even potato slices or a sharp knife with patience. Let casserole rest 5 minutes before serving to set layers.
