A sweet and comforting breakfast bake using pre-made cinnamon rolls soaked in a cinnamon-spiced custard and topped with a simple glaze. Perfect for cozy mornings and easy entertaining.

  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk or 2% milk
  • 1/2 cup (120 ml) heavy cream (optional but recommended)

  • 1 teaspoon ground cinnamon
  • 2 tablespoons packed brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk or cream (for glaze)
  • Optional pinch of cinnamon for glaze
  • Optional: fresh sliced apples or chopped pecans for seasonal twist

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Tear each cinnamon roll into large chunks (about 2-inch pieces) and spread evenly in the baking dish.
  3. In a large bowl, whisk together 6 large eggs, 2 cups milk, 1/2 cup heavy cream, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, 2 tablespoons brown sugar, and 2 tablespoons melted butter until fully combined and slightly frothy.
  4. Slowly pour the custard mixture over the cinnamon roll pieces, pressing gently with a spatula to soak them. Let sit for 10 minutes to absorb the custard.
  5. Bake in the preheated oven for 40-45 minutes until the top is golden brown and slightly crispy and the custard is set but soft inside.
  6. While baking, whisk 1 cup powdered sugar with 2-3 tablespoons milk or cream until smooth and pourable. Add a pinch of cinnamon if desired.
  7. Remove the bake from the oven and let cool for 5-10 minutes. Drizzle the glaze evenly over the top before serving.

Notes

Let the custard soak into the cinnamon rolls for at least 10 minutes for a soft, custardy center. Use room temperature eggs and milk for even baking. Watch the edges in the last 10 minutes and tent with foil if browning too fast. For extra gooeyness, add an extra cinnamon roll and adjust baking time slightly. Prepare the glaze while baking to save time.
