A creamy, comforting slow cooker soup that combines tender chicken, enchilada spices, and a rich broth. This easy recipe requires minimal prep time and delivers restaurant-quality flavor with simple pantry ingredients.

Ingredients

Scale
  • 3 cups shredded rotisserie chicken (or canned chicken)
  • 1 jar (16 oz) medium or mild salsa
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups low-sodium chicken broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 8 oz cream cheese, cut into cubes
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Toppings: Shredded Mexican blend cheese, sour cream, fresh cilantro, tortilla chips

Instructions

  1. Shred the rotisserie chicken by hand or with two forks. If using canned chicken, drain it well.
  2. Add the shredded chicken, salsa, cream of chicken soup, chicken broth, black beans, corn, cumin, chili powder, and smoked paprika to the slow cooker.
  3. Stir all ingredients together until well combined.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours until flavors have melded.
  5. About 30 minutes before serving, add the cubed cream cheese to the slow cooker.
  6. Stir frequently until the cream cheese is completely melted and incorporated into the broth.
  7. Taste the soup and adjust seasoning with salt and pepper if needed.
  8. Ladle into bowls and serve with desired toppings such as shredded cheese, sour cream, cilantro, and crushed tortilla chips.

Notes

If the soup is too thick, add more broth. If too thin, cook uncovered for the last hour to reduce. For a lighter option, use low-fat cream of mushroom soup and skip sour cream. Toasting spices before adding can enhance flavor. Cream cheese should be added at the end to prevent breaking.
