  • 2 tsp vanilla extract
  • ½ cup funfetti cake mix (optional)
  • ½ cup granulated sugar (100g) for cinnamon sugar coating
  • 1 tbsp ground cinnamon for cinnamon sugar coating
  • 8 oz cream cheese (226g), softened
  • ½ cup unsalted butter (113g), softened
  • 2 cups powdered sugar (240g), sifted
  • 1 tsp vanilla extract for filling
  • 2 tbsp sprinkles (optional, for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, salt, and funfetti cake mix (if using). Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next, then mix in the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed just until combined. Avoid overmixing.
  6. In a small bowl, mix the granulated sugar and ground cinnamon for the coating.
  7. Using a tablespoon or cookie scoop, form dough balls about 1 ½ inches in diameter. Roll each ball in the cinnamon sugar mixture until well coated, then place on prepared baking sheets about 2 inches apart.
  8. Bake for 10-12 minutes, until edges are set but centers look soft. Let cookies cool on baking sheets for 5 minutes before transferring to a cooling rack.
  9. While cookies cool, beat the softened cream cheese and butter together until smooth and creamy. Gradually add powdered sugar and vanilla extract, beating until fluffy. Fold in sprinkles if desired.
  10. Once cookies are completely cool, spread about 1 tablespoon (15g) of filling on the flat side of one cookie, then top with another cookie and gently press together. Repeat with remaining cookies.
  11. Chill assembled cookies in the refrigerator for at least 30 minutes to let the filling set.

Notes

If dough is too soft to handle, chill for 15 minutes before shaping. Avoid overmixing dough to keep cookies tender. Chill assembled cookies to prevent filling from oozing. Dough can be refrigerated up to 24 hours before baking. Cookies freeze well when wrapped individually.
