  • 2 slices thick-cut white or sourdough bread (Country White recommended)
  • 1 slice sharp cheddar cheese
  • 1 slice mozzarella cheese
  • Optional: 1 thin slice Gruyère cheese
  • 2 tablespoons unsalted butter, softened
  • Optional seasoning: pinch of smoked paprika or black pepper
  • Optional add-ins: thin slices of tomato or fresh basil leaves

Instructions

  1. Take the butter out to soften for about 10 minutes. Slice your cheese if it’s not pre-sliced. If adding tomato or basil, slice or tear those now.
  2. Spread a thin, even layer of softened butter on one side of each bread slice. This will be the outside that crisps up in the pan.
  3. Place one bread slice, buttered side down, on a clean plate or cutting board. Layer cheeses on top—start with cheddar, then mozzarella, and optionally Gruyère. Add tomato or basil if using. Top with the second bread slice, buttered side up.
  4. Place your skillet over medium-low heat and let it warm up for about 2 minutes.
  5. Place the sandwich carefully in the pan. Press down lightly with the spatula. Cook for 3-4 minutes until the bottom is golden brown.
  6. Use the spatula to flip the sandwich gently. Cook the other side for another 3-4 minutes. If cheese isn’t melting enough, turn heat down slightly and cover the pan with a lid for 1-2 minutes.
  7. Check inside to ensure cheese is melted and stretchy, bread is crispy and golden. If not, cook another minute on low heat.
  8. Slice diagonally and serve immediately while warm and gooey.

Notes

Cook on medium-low heat to avoid burning the bread while allowing cheese to melt. Use an even layer of butter for a golden crust. Cover pan briefly if cheese melts slowly. For dairy-free or gluten-free versions, substitute butter and cheese accordingly and use gluten-free bread.
