Ingredients

  • Ground cinnamon (2 tbsp)
  • Pure maple syrup (60ml / ยผ cup)

  • Chopped pecans (100g / 1 cup), toasted lightly
  • Cream cheese (115g / 4 oz), softened (for frosting)
  • Unsalted butter (30g / 2 tbsp), softened (for frosting)
  • Powdered sugar (120g / 1 cup), sifted
  • Pure maple syrup (15ml / 1 tbsp) (for frosting)
  • Vanilla extract (1 tsp)
  • Pinch of salt (for frosting)

Instructions

  1. Activate your sourdough starter 4-6 hours before starting so it is bubbly and active, about 100g (ยฝ cup).
  2. In a large mixing bowl, combine warm milk (ยฝ cup), melted butter (3 ยฝ tbsp), sugar (ยผ cup), and egg. Stir gently.
  3. Add the sourdough starter and mix until combined.
  4. In a separate bowl, whisk together flour (2 ยพ cups) and salt (1 tsp).
  5. Gradually add dry ingredients to wet mixture, stirring or using a stand mixer with dough hook on low speed until a shaggy dough forms.
  6. Knead dough for 8-10 minutes until smooth and elastic; dough should be tacky but not sticky.
  7. Lightly oil a large bowl, place dough inside, cover with plastic wrap or damp towel, and let rise at room temperature for 2-3 hours until puffed and airy.
  8. While dough rises, toast pecans in a 350ยฐF (175ยฐC) oven for about 5 minutes until fragrant.
  9. Mix softened butter (4 tbsp), cinnamon (2 tbsp), brown sugar (โ…“ cup), and maple syrup (ยผ cup) until smooth to make filling.
  10. Turn dough onto floured surface and roll into a 15×10 inch rectangle.
  11. Spread cinnamon-maple filling evenly over dough, then sprinkle toasted pecans on top.

  13. Cut log into 12 even rolls about 1 ยฝ inches thick.

Notes

Toast pecans at 350ยฐF for about 5 minutes until fragrant but not burnt. Use walnuts as a substitute if needed. For gluten-free, use a gluten-free all-purpose flour blend designed for yeast breads.
