A quick, easy, and comforting one-pot chili made with lean ground turkey and pure pumpkin puree. This recipe balances savory spices with the natural sweetness of pumpkin for a creamy, hearty meal ready in under 45 minutes.

  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 15 oz can 100% pure pumpkin puree
  • 15 oz can plain tomato sauce
  • 2 cups low-sodium beef or vegetable broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and a pinch of salt, cooking until translucent and soft (about 5 minutes). Add minced garlic in the last minute.
  2. Increase heat to medium-high. Add ground turkey, breaking it up with a spoon. Cook until no longer pink (about 7 minutes). Drain excess fat if necessary.
  3. Reduce heat to medium-low. Add chili powder, cumin, and smoked paprika. Stir constantly for 60 seconds to toast the spices.
  4. Pour in tomato sauce, pumpkin puree, and broth. Stir until the pumpkin is fully incorporated and the mixture is smooth.
  5. Add the drained kidney beans. Bring to a gentle boil, then reduce heat to low. Cover with a lid slightly ajar and simmer for 20 minutes, stirring occasionally.
  6. Taste and season with salt and black pepper. Adjust consistency with more broth if too thick or simmer uncovered if too thin. Serve hot.

Notes

Ensure you use 100% pure pumpkin puree, not pumpkin pie filling, which contains added sugars. Toasting the spices before adding liquids enhances the flavor profile. The chili tastes even better the next day as flavors meld. It can be frozen for up to 3 months.
