Ingredients

  • 1 lb Italian sausage, casings removed
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1.5 lbs Russet potatoes, peeled and diced into ½-inch cubes
  • 4 cups chicken broth, low-sodium
  • ½ cup heavy cream
  • 1 bunch lacinato kale, stems removed and leaves chopped
  • ½ teaspoon red pepper flakes
  • Salt and black pepper to taste

Instructions

  1. Brown the Sausage: Heat a Dutch oven or large pot over medium-high heat. Add the Italian sausage, breaking it up with a wooden spoon. Cook until deeply browned, about 5 minutes. Use a slotted spoon to transfer the sausage to a bowl, leaving the rendered fat in the pot.
  2. Sauté the Aromatics: Reduce heat to medium. Add the diced onion to the pot with the sausage fat. Cook until soft and translucent, about 4 minutes. Add the minced garlic and red pepper flakes, cook for 30 seconds until fragrant.
  3. Deglaze the Pot: Pour in about ½ cup of the chicken broth and scrape up all the browned bits from the bottom of the pot.
  4. Add Potatoes and Broth: Add the diced potatoes and remaining 3.5 cups of chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until potatoes are fork-tender.
  5. Return Sausage and Add Cream: Return the browned sausage to the pot. Stir in the heavy cream. Let the soup come to a gentle simmer. Adjust seasoning with salt and pepper.
  6. Wilt the Kale: Add the chopped kale to the pot. Stir and cook for 3-5 minutes until wilted and vibrant green.
  7. Finish and Serve: Remove from heat. Let rest for 5 minutes. Ladle into bowls and serve hot, with optional red pepper flakes or Parmesan cheese.

Notes

For a thicker soup, remove about 1 cup of cooked potatoes and broth before adding kale, blend until smooth, and stir back in. Don’t rush the browning of the sausage for best flavor. Add kale at the very end to avoid overcooking. For freezing, leave out the cream and add after reheating.
