  • 1 lb ground beef (85/15 recommended)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 3 medium carrots, peeled and diced
  • 3 stalks celery, diced
  • 2 medium russet potatoes, peeled and diced into 1/2-inch cubes
  • 2 cups frozen mixed vegetables (peas, corn, green beans, carrots)
  • 1 can (14.5 oz) diced tomatoes (fire-roasted preferred), with juices
  • 2 tablespoons tomato paste
  • 4 cups low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary, crushed
  • 2 bay leaves
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a wooden spoon, until browned all over, about 6-8 minutes. Transfer beef to a plate lined with paper towels. Pour off all but 1 tablespoon of fat from the skillet.
  2. In the same skillet, add diced onion and cook over medium heat for about 4 minutes until softened and translucent. Add minced garlic and cook for 30 seconds until fragrant, scraping up any browned bits from the bottom of the pan.
  3. Add tomato paste to the skillet and stir into the onions and garlic. Cook for about 1 minute, stirring constantly, until the paste darkens slightly.
  4. Transfer the onion-garlic mixture to a 5-6 quart slow cooker. Add the browned ground beef, diced carrots, celery, potatoes, frozen mixed vegetables, diced tomatoes with juices, beef broth, Worcestershire sauce, dried thyme, crushed rosemary, and bay leaves. Stir to combine.
  5. Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours. About 30 minutes before serving, remove bay leaves and taste the broth. Add salt and pepper as needed.
  6. Ladle soup into bowls and garnish with fresh parsley if desired. Serve hot with crusty bread or a grilled cheese sandwich.

Notes

For a thicker broth, mash a few potato chunks against the side of the slow cooker before serving. Start with less salt and adjust at the end to avoid over-salting. This soup tastes even better the next day.
