Ingredients

Scale
  • 2 cups (300g) cooked chicken, shredded (rotisserie chicken recommended)
  • 8 oz (225g) cream cheese, softened
  • ½ cup (120ml) buffalo hot sauce (Frank’s RedHot recommended)
  • ½ cup (120ml) ranch dressing
  • 1 cup (100g) shredded cheddar cheese
  • ½ cup (75g) blue cheese crumbles (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp black pepper, freshly ground
  • About 4 cups (100g) tortilla chips (homemade or store-bought)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Shred about 2 cups (300g) of cooked chicken.
  3. In a mixing bowl, combine 8 oz (225g) softened cream cheese with ½ cup (120ml) buffalo hot sauce, ½ cup (120ml) ranch dressing, 1 tsp garlic powder, 1 tsp onion powder, and ¼ tsp freshly ground black pepper. Stir until smooth and well blended.
  4. Fold in 1 cup (100g) shredded cheddar cheese and, if using, ½ cup (75g) blue cheese crumbles.
  5. Add the shredded chicken to the mixture and fold gently until evenly coated.
  6. Spread the mixture evenly into an 8×8 inch (20×20 cm) baking dish and smooth the top.
  7. Bake for 20–25 minutes, or until the dip is hot and bubbly with a slight golden hue on top.
  8. If baking homemade tortilla chips, cut corn tortillas into triangles, toss lightly with olive oil and sea salt, and bake at 350°F (175°C) for 10–12 minutes until crispy.
  9. Remove the dip from the oven and let it cool for 5 minutes before serving with crispy tortilla chips.

Notes

Use softened cream cheese to avoid lumps. Adjust buffalo sauce amount to control heat level. Watch the dip closely from minute 18 to avoid burning. For extra richness, brush melted butter on top before baking. Homemade tortilla chips are recommended for best crunch. Do not overmix chicken to keep texture chunky and creamy. Dairy-free and low-carb substitutions suggested in the recipe.
