A quick and easy stovetop dip made with rotisserie chicken, cream cheese, buffalo sauce, and a blend of cheddar and mozzarella. It cooks in under 15 minutes and offers a creamy, spicy, and comforting flavor perfect for game days.

  • 2 cups shredded cooked chicken (rotisserie or boiled)
  • 8 ounces full-fat block cream cheese, softened and cubed
  • 1/2 cup buffalo sauce (such as Frank’s RedHot or Texas Pete)
  • 1/2 cup ranch dressing
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons butter
  • 2 cloves garlic, minced

Instructions

  1. Shred the chicken and pat it dry with a paper towel to remove excess moisture.
  2. Cut the cream cheese into small cubes to help it melt faster.
  3. Heat butter in a large skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant, being careful not to brown it.
  4. Add the shredded chicken to the skillet and stir to coat with the garlic butter. Let it heat through for about 2 minutes.
  5. Reduce heat to medium-low. Add the cream cheese cubes to the skillet and mash them into the chicken mixture with a spatula until mostly melted and creamy.
  6. Pour in the buffalo sauce and ranch dressing. Stir constantly until the mixture becomes a smooth, orange-pink sauce.
  7. Sprinkle the shredded cheddar and mozzarella over the top. Let sit for 30 seconds to soften, then gently fold into the mixture until fully melted and glossy.
  8. Taste and adjust seasoning with salt, pepper, or additional sauce/ranch as needed.
  9. Serve immediately while hot, keeping the skillet on low heat to maintain warmth.

Notes

Ensure cream cheese is full-fat block, not spreadable, to avoid a watery dip. Grate your own cheese to prevent anti-caking agents from hindering melting. Keep heat on medium-low once dairy is added to prevent the cheese from breaking or becoming oily. Can be made in a slow cooker on low for 2 hours.
