A no-bake dessert that combines cool, tangy cream cheese with sweet caramel and fresh apple crunch. Perfect for fall gatherings, this easy dip comes together in under 15 minutes and is sure to be a crowd-pleaser.

Ingredients

Scale
  • 16 oz cream cheese, softened to room temperature
  • ½ cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • ½ cup caramel sauce, plus more for drizzling
  • 2 medium apples, finely diced (Honeycrisp or Fuji recommended)
  • 1 tablespoon lemon juice
  • Optional toppings: ¼ cup chopped pecans or walnuts, flaky sea salt, extra caramel drizzle

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge at least 1 hour before starting. It should be soft enough that a finger pressed into it leaves an indent without resistance. If forgotten, cut into 1-inch cubes and microwave on low power for 15 seconds, flip and go another 10 seconds. Do not let it get hot.
  2. Beat the cream cheese and brown sugar: In a large mixing bowl, combine the softened cream cheese and packed brown sugar. Beat on medium speed for 2-3 minutes until completely smooth and fluffy, with no lumps. Scrape down the sides of the bowl halfway through.
  3. Add the vanilla and caramel: Pour in the vanilla extract and ¼ cup of the caramel sauce. Beat on low speed until fully incorporated, about 30 seconds. Do not overmix. Scrape the bowl and give a final stir by hand.
  4. Prep the apples: Dice the apples into small, bite-sized cubes (about ¼-inch pieces). Toss them in a small bowl with the lemon juice to prevent browning.
  5. Fold in the apples: Gently fold the diced apples into the cream cheese mixture using a rubber spatula. Fold just until evenly distributed—do not overmix.
  6. Chill (optional but recommended): Transfer the dip to a serving bowl, cover with plastic wrap, and refrigerate for at least 30 minutes. This firms up the texture and lets the flavors meld.
  7. Finish and serve: Just before serving, drizzle the remaining ¼ cup of caramel sauce over the top. Swirl gently with a knife or toothpick. Add chopped nuts and a sprinkle of flaky sea salt if desired. Serve with apple slices, graham crackers, or cookies.

Notes

Let cream cheese soften for at least 1 hour for best texture. Use room-temperature caramel sauce to avoid streaks. Pat diced apples dry after tossing in lemon juice to prevent watery dip. Taste caramel sauce and adjust brown sugar accordingly. The dip can be made up to 24 hours ahead; add final caramel drizzle and toppings just before serving. Store covered in the refrigerator for up to 3 days.
