A thick, velvety, and comforting slow cooker soup made with sharp cheddar cheese and tender broccoli. This easy, one-pot meal is perfect for cold days and requires minimal prep time.

Ingredients

Scale
  • 4 cups broccoli florets (fresh or frozen)
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 3–4 cloves garlic, minced
  • 32 ounces (1 quart) low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional: Cooked bacon bits, diced ham, or cayenne pepper

Instructions

  1. Wash and cut fresh broccoli into bite-sized pieces; measure 4 cups of frozen broccoli if using. Dice the onion and mince the garlic.
  2. If using a slow cooker with a sauté function, melt butter in the pot. Add onion and cook for 3-4 minutes until translucent. Add garlic and cook for 30 seconds until fragrant.
  3. Pour chicken broth into the slow cooker. Add the sautéed (or raw) onions, garlic, and broccoli florets. Stir to combine.
  4. Season with garlic powder, onion powder, smoked paprika, salt, and pepper. Ensure broth covers broccoli about halfway.
  5. Cover and cook on Low for 4-6 hours until broccoli is very tender, or on High for 2-3 hours.
  6. Use an immersion blender to puree the soup directly in the pot until smooth and creamy.
  7. Stir in heavy cream. Gradually add shredded cheddar cheese, a handful at a time, stirring constantly until melted. Do not boil after adding cheese.
  8. Taste and adjust seasoning with salt and pepper. Serve hot with crusty bread or garnishes.

Notes

For best results, shred your own cheese to avoid anti-caking agents that prevent smooth melting. If using fresh broccoli, check for tenderness after 3 hours as it cooks faster than frozen. To thicken, use a cornstarch slurry or reserve some broccoli before blending. Store leftovers in the fridge for up to 4 days; freeze without dairy components for up to 3 months.
