  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese, plus more for topping

Instructions

  1. Prep the Potatoes: Peel the russet potatoes and dice them into 1-inch cubes. Rinse the diced potatoes in cold water to remove excess starch, then drain well.
  2. Combine in the Crockpot: Add the diced potatoes and chicken broth to a 6-quart or larger slow cooker. Stir to combine. The broth should just about cover the potatoes; add a little more broth or water if needed.
  3. Slow Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are fork-tender.
  4. Mash or Blend: Use a potato masher to mash the potatoes right in the crockpot to your desired consistency, or use an immersion blender for a smooth soup.
  5. Add the Cream and Cheese: Stir in the heavy cream and shredded cheddar cheese until the cheese is completely melted and the soup is uniform in color. Season with salt and black pepper to taste.
  6. Simmer to Thicken (Optional): If you want a thicker soup, let it cook uncovered on low for another 30 minutes, stirring occasionally.
  7. Serve and Load Up: Ladle the soup into bowls and top with your favorite baked potato fixings, such as crumbled bacon, extra shredded cheese, sour cream, and sliced green onions or fresh chives. Serve immediately.

Notes

For best results, add the cream and cheese at the very end to prevent curdling. Rinsing the potatoes removes excess starch and prevents a gluey texture. The soup thickens as it cools; add a splash of broth or cream when reheating. For a dairy-free version, use full-fat canned coconut milk and dairy-free cheddar shreds. For a lighter version, substitute evaporated milk for heavy cream and use reduced-fat cheese.
