A quick and easy creamy cucumber salad with fresh dill and a tangy mayo-based dressing, perfect for summer gatherings and a refreshing side dish.

Ingredients

Scale
  • 2 medium English cucumbers (about 12 ounces / 340 grams), thinly sliced
  • ½ cup (120 ml) mayonnaise
  • 3 tablespoons fresh dill, finely chopped
  • 1 tablespoon (15 ml) white vinegar
  • 1 teaspoon (5 grams) sugar
  • ½ teaspoon (3 grams) salt, or to taste
  • ¼ teaspoon (1 gram) freshly ground black pepper, optional
  • ¼ teaspoon (1 gram) garlic powder, optional

Instructions

  1. Wash and dry the cucumbers thoroughly. Using a sharp knife, slice them thinly (about 1/8 inch or 3 mm thick). Peel half the cucumber if preferred.
  2. In a large bowl, whisk together mayonnaise, white vinegar, sugar, salt, garlic powder, and freshly ground black pepper until smooth and creamy. Taste and adjust seasoning if needed.
  3. Add the sliced cucumbers and fresh dill to the bowl with the dressing. Gently toss to coat all slices evenly using a folding motion to avoid crushing the cucumbers.
  4. Let the salad sit at room temperature for 10 minutes, or refrigerate for 20-30 minutes if you want it chilled to allow cucumbers to soften and soak up the dressing.
  5. Give the salad a gentle stir before serving. Taste again and add a pinch of salt or more dill if desired. Serve chilled or at room temperature.

Notes

Do not skip the resting time to allow the quick pickle effect. Serve within a couple of hours for best texture and flavor. Avoid making too far in advance to prevent sogginess. Pat cucumbers dry before mixing to reduce watery salad. Fresh dill is essential for best flavor.
