  • 1 cup (240g) canned pumpkin puree (100% pure, not pie filling)
  • 1 ½ cups (340g) plain, non-fat or low-fat Greek yogurt
  • ¼ cup (60ml) pure maple syrup
  • 1 teaspoon (5ml) pure vanilla extract
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves (optional)
  • Whipped cream (optional, for topping)
  • Toasted pumpkin seeds (optional, for topping)

Instructions

  1. Ensure Greek yogurt is cold and stir canned pumpkin to remove excess liquid.
  2. In a medium mixing bowl, whisk Greek yogurt and maple syrup until smooth and combined.
  3. Add pumpkin puree to the yogurt mixture and whisk vigorously until uniform in color with no streaks.
  4. Add cinnamon, ginger, nutmeg, cloves, and vanilla extract. Whisk until evenly distributed. Taste and adjust sweetness or spice if desired.
  5. For a fluffier texture, use an electric mixer on medium-high speed for 2-3 minutes. If using a whisk, mix until very smooth.
  6. Spoon the mousse into serving glasses or jars, filling them about three-quarters full. Smooth the tops with the back of a spoon.
  7. Refrigerate for at least 2 hours, or preferably overnight, to allow flavors to meld and mousse to firm up.
  8. Before serving, add desired toppings such as whipped cream, toasted pumpkin seeds, or a drizzle of maple syrup.

Notes

Ensure ingredients are cold to help the mousse set. If the mousse is too runny, drain the pumpkin puree in a cheesecloth for 10 minutes before using. If too thick, add a teaspoon of milk. For a dairy-free version, substitute coconut yogurt. The flavor improves after 24 hours in the fridge.
