  • 3 pounds Yukon Gold or red potatoes, washed and diced into 1-inch pieces
  • 8 slices bacon, cooked until crispy and crumbled
  • 1 ½ cups sharp cheddar cheese, shredded
  • 4 large green onions, thinly sliced
  • ¾ cup mayonnaise
  • ½ cup sour cream
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Place the diced potatoes in a large pot and cover with cold water by about 2 inches. Add a pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer. Cook until potatoes are fork-tender but not falling apart, about 12-15 minutes. Drain well in a colander and let cool slightly.
  2. While potatoes cook, heat a skillet over medium heat. Add bacon slices and cook until crispy, turning occasionally, about 8-10 minutes. Transfer bacon to paper towels to drain, then crumble once cool.
  3. In a large mixing bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper until smooth and creamy.
  4. Add the warm potatoes to the dressing and gently fold to coat. Be careful not to mash the potatoes. Fold in crumbled bacon, shredded cheddar, and green onions.
  5. Cover and refrigerate the salad for at least 1 hour to let flavors meld.
  6. Just before serving, sprinkle chopped fresh parsley on top for color and freshness.

Notes

Start potatoes in cold water to cook evenly and avoid mushiness. Let bacon cool completely before crumbling to keep it crisp. Chill salad for at least 1 hour or overnight for best flavor. If salad is too thick after chilling, stir in a splash of milk or extra sour cream. Be gentle when folding ingredients to avoid mashing potatoes.
