  • 3 pounds Russet potatoes (about 6 medium), peeled and quartered
  • 2 whole heads garlic, roasted
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup whole milk, warmed (or heavy cream for richer taste)
  • 1/4 cup sour cream, room temperature
  • 1 1/2 teaspoons salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • Chives or parsley, finely chopped, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Slice tops off two garlic heads, drizzle with olive oil, wrap in foil, and roast for 40 minutes until cloves are soft and golden. Let cool completely.
  2. Place peeled and quartered potatoes in a large pot, cover with cold water, add 1 teaspoon salt. Bring to a boil over high heat, then reduce to simmer. Cook 15-20 minutes until tender. Drain and return potatoes to pot to dry for 1-2 minutes.
  3. Squeeze roasted garlic cloves out of skins into potatoes. Add softened butter and mash with potato masher or ricer until smooth.
  4. Warm milk or cream slightly. Stir in sour cream, milk, salt, and pepper. Mix gently until creamy and well combined. Adjust seasoning to taste.
  5. Transfer mashed potatoes to an oven-safe dish, cover tightly with foil or plastic wrap, and refrigerate overnight or up to 2 days.
  6. On serving day, preheat oven to 350°F (175°C). Remove cover and bake mashed potatoes for 30-40 minutes until heated through, stirring halfway. Garnish with chopped chives or parsley before serving.

Notes

Roast garlic slowly to avoid bitterness. Use Russet potatoes for fluffy texture. Avoid overmixing to prevent gluey potatoes. Warm dairy ingredients before mixing. If potatoes dry after refrigeration, stir in warm milk before reheating. Cover tightly when refrigerating to prevent drying out. Bring potatoes close to room temperature before reheating for even warming.
