  • 4 large bell peppers (any color)
  • 2 pounds ricotta cheese (whole milk)
  • Grated mozzarella cheese (from a block)
  • 1 large egg (room temperature)
  • 1 teaspoon Italian seasoning (dried or fresh)
  • Salt and pepper to taste
  • Marinara sauce (for the bottom of the dish)
  • Pizza dough (high-hydration preferred)
  • Butter (melted, for brushing)

Instructions

  1. Preheat oven to 375°F (190°C). Wash bell peppers and slice off the top inch. Remove seeds and white membranes to create a hollow cavity. If needed, slice a tiny bit off the bottom so they sit flat.
  2. In a medium bowl, combine ricotta cheese, grated mozzarella, beaten egg, Italian seasoning, salt, and pepper. Mix until smooth and creamy.
  3. Spoon the cheese mixture into each pepper, filling them about 3/4 full. Pack it down gently.
  4. Roll out pizza dough on a lightly floured surface. Cut into strips about 1 inch wide and long enough to wrap around the peppers.
  5. Wrap each stuffed pepper with dough strips, starting at the bottom and wrapping up, leaving small gaps for eyes. Wet fingers slightly if dough is dry to help it adhere.
  6. Spread a thin layer of marinara sauce on the bottom of a 9×13 baking dish. Place wrapped peppers seam-side down on top.
  7. Brush the dough strips with melted butter.
  8. Bake for 25-30 minutes, or until the dough is golden brown and the peppers are tender when pierced with a knife.

Notes

For gluten-free option, use gluten-free pizza dough. For dairy-free, swap cheeses for vegan alternatives. Ensure ricotta is drained well to prevent leaking. Serve with extra marinara for dipping. Leftovers can be refrigerated for 3 days and reheated in the oven.
