A quick and easy no-bake lemon icebox pie with a creamy, tangy filling and buttery graham cracker crust, perfect for summer gatherings and last-minute desserts.

  • 1 ½ cups graham cracker crumbs (about 10 full sheets), finely crushed
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 1 cup heavy cream, cold
  • ½ cup fresh lemon juice (about 34 lemons)
  • Zest of 2 lemons
  • 1 teaspoon pure vanilla extract (optional)

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until evenly moistened and holds together when pressed, about 3 minutes.
  2. Press the crumb mixture firmly into the bottom and slightly up the sides of a 9-inch pie dish. Chill in the fridge for about 15 minutes.
  3. In a large bowl, beat softened cream cheese with an electric mixer until smooth and creamy, about 2 minutes. Add powdered sugar and vanilla extract, beating until fully incorporated.
  4. In a separate chilled bowl, whip cold heavy cream on medium-high speed until stiff peaks form, about 3-4 minutes.
  5. Fold fresh lemon juice and lemon zest gently into the cream cheese mixture. Then carefully fold in the whipped cream until just combined.
  6. Pour the lemon filling into the chilled crust, smooth the top, cover with plastic wrap, and refrigerate for at least 4 hours or preferably overnight.
  7. Before serving, garnish with extra lemon zest, thin lemon slices, or a dollop of whipped cream. Slice and enjoy.

Notes

Use room temperature cream cheese for smooth blending. Chill mixing bowls before whipping cream for better results. Fold whipped cream gently to keep airy texture. Refrigerate pie overnight for best flavor and texture. For dairy-free version, substitute cream cheese and heavy cream with coconut-based alternatives.
