Creamy No-Bake Oreo Cheesecake Recipe with Easy Chocolate Ganache

  • 5 tbsp unsalted butter, melted
  • 16 oz (450g) cream cheese, softened
  • 1 cup (240ml) heavy cream, cold
  • 3/4 cup (90g) powdered sugar
  • 1 tsp vanilla extract
  • 8 Oreo cookies, roughly chopped
  • 4 oz (115g) semi-sweet chocolate chips or chopped chocolate
  • 1/3 cup (80ml) heavy cream

Instructions

  1. Prepare the crust (10 minutes): Crush 24 Oreos finely using a food processor or place them in a zip-top bag and crush with a rolling pin. Mix the crumbs with 5 tablespoons melted butter until evenly combined and sandy. Press this mixture firmly into the base of your 9-inch springform pan, creating an even layer. Use the bottom of a glass or measuring cup to compact it tightly. Chill in the fridge while you prepare the filling.
  2. Make the cheesecake filling (15-20 minutes): Beat 16 oz softened cream cheese with 3/4 cup powdered sugar and 1 teaspoon vanilla extract until smooth and creamy, about 2-3 minutes with a mixer on medium speed. In a separate chilled bowl, whip 1 cup cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined. Stir in 8 chopped Oreos.
  3. Assemble the cheesecake (5 minutes): Spoon the filling over the chilled Oreo crust. Smooth the top with a spatula. Return the pan to the fridge to chill for at least 4 hours, or preferably overnight.
  4. Prepare the chocolate ganache (10 minutes): Heat 1/3 cup heavy cream in a small saucepan over low heat until it just begins to simmer. Pour the hot cream over 4 oz semi-sweet chocolate chips in a heatproof bowl. Let it sit for 2 minutes, then stir gently until smooth and glossy. Let the ganache cool slightly so it thickens but is still pourable.
  5. Finish the cheesecake (5 minutes): Once the cheesecake is firm, pour the ganache evenly over the top. Use a spatula or the back of a spoon to gently spread it to the edges. Chill for another 30 minutes to set the ganache before serving.

Notes

If cream cheese isn’t softened enough, microwave briefly in 10-second bursts to avoid lumps. Whip heavy cream straight from the fridge to stiff peaks. Fold filling gently to keep it light. Warm ganache gently if it looks dull or grainy. Chill cheesecake overnight for best results. Use a warm knife for clean slices.
