  • 1 teaspoon pure vanilla extract
  • 1 ½ cups heavy cream, cold
  • 3 large ripe peaches, peeled and diced
  • 2 tablespoons honey or maple syrup (optional)
  • 1 teaspoon lemon juice

Instructions

  1. Combine graham cracker crumbs, melted butter, and sugar in a bowl. Mix until crumbs are evenly coated and feel like wet sand.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Chill in the fridge for at least 15 minutes.
  3. Toss diced peaches with honey (or maple syrup) and lemon juice in a small bowl. Set aside to marinate.
  4. Beat softened cream cheese with an electric mixer until smooth (2-3 minutes). Add powdered sugar and vanilla extract, then beat until silky.
  5. In a separate cold bowl, whip heavy cream until stiff peaks form (3-5 minutes).
  6. Gently fold whipped cream into the cream cheese mixture using slow, sweeping motions.
  7. Spread half of the cream cheese mixture over the chilled crust evenly.
  8. Spoon the marinated peaches over the cream cheese layer in an even layer.
  9. Spread the remaining cream cheese filling on top, covering the peaches completely and smoothing the top.
  10. Cover the pie with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  11. Before slicing, let the pie sit at room temperature for 10 minutes. Use a sharp knife dipped in hot water for clean slices.
