A quick and easy no-churn ice cream bursting with tropical flavors of ripe mango, creamy coconut, and zesty lime. Perfect for summer gatherings and made without an ice cream maker.

  • 2 cups ripe mangoes, peeled and diced (about 300 grams)
  • 1 cup full-fat coconut milk (240 ml)
  • 1 cup heavy whipping cream, chilled (240 ml)
  • 3/4 cup sweetened condensed milk (180 ml)
  • Zest of 1 lime
  • 2 tablespoons lime juice (30 ml)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: toasted shredded coconut for topping or folding in
  • Optional: chopped fresh mint
  • Optional: splash of rum or coconut liqueur

Instructions

  1. Peel and dice ripe mangoes into roughly 1/2-inch cubes. Set aside about 1/4 cup (40 grams) for folding in later to add texture. Puree the rest until smooth but slightly textured. (10-14 minutes total)
  2. In a mixing bowl, combine coconut milk, sweetened condensed milk, lime zest, lime juice, vanilla extract, and a pinch of salt. Stir gently to blend.
  3. Using an electric mixer, whip the chilled heavy cream on medium-high speed until soft peaks form (3-5 minutes).
  4. Gently fold the mango puree into the coconut-lime mixture until combined.
  5. Carefully fold the whipped cream into the mango-coconut mixture in three batches, using gentle folding motions to keep the airiness.
  6. Fold in the reserved diced mango pieces for bursts of juicy texture.
  7. Pour the mixture into a freezer-safe loaf pan or container, smooth the top, cover tightly, and freeze for at least 6 hours or overnight until firm.
  8. Before serving, let the ice cream sit at room temperature for 5-10 minutes to soften slightly for easier scooping.

Notes

Use ripe mangoes for best flavor. Shake canned coconut milk before use. For dairy-free, substitute heavy cream and condensed milk with coconut cream and coconut condensed milk or maple syrup. Cover surface with parchment paper before freezing to prevent ice crystals. Let ice cream soften 5-10 minutes before serving for easier scooping.
