A quick and healthy no-cook breakfast featuring creamy overnight oats thickened with chia seeds and topped with a sweet, tangy strawberry compote.

  • 2 tablespoons (30 ml) chia seeds
  • 1 cup (240 ml) milk of choice (whole milk, almond milk, or oat milk)
  • ½ cup (120 g) plain Greek yogurt, unsweetened
  • 12 tablespoons (1530 ml) maple syrup or honey
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (150 g) fresh strawberries, hulled and sliced
  • 1 teaspoon (5 ml) lemon juice
  • Optional toppings: toasted almonds, shredded coconut, or extra fresh berries

Instructions

  1. Prepare the strawberry compote: Place 1 cup (150 g) hulled and sliced strawberries in a small saucepan over medium heat. Add 1 teaspoon (5 ml) lemon juice and 1 tablespoon (15 ml) maple syrup or honey. Stir gently as the fruit releases juices. Simmer for about 10 minutes, stirring occasionally, until the strawberries break down and the mixture thickens slightly. Remove from heat and let cool. If too runny, simmer longer; if too thick, add a splash of water.
  2. Mix the oats and chia seeds in a medium bowl, stirring well to evenly distribute the chia seeds.
  3. Add 1 cup (240 ml) milk, ½ cup (120 g) plain Greek yogurt, 1-2 tablespoons (15-30 ml) maple syrup or honey, and 1 teaspoon (5 ml) vanilla extract to the oat mixture. Stir until fully combined and creamy but not overly runny.
  4. Divide the mixture into two or three glass jars or airtight containers. Seal tightly and refrigerate overnight or for at least 6 hours to allow oats and chia seeds to absorb liquid and soften.
  5. When ready to serve, stir the oats gently if needed. Spoon a generous layer of cooled strawberry compote on top. Add optional toppings like toasted almonds or extra fresh berries. Serve chilled.
