A simple, no-cook breakfast that transforms raw oats into a pudding-like texture overnight. This recipe combines creamy peanut butter, ripe bananas, and oats for a nutritious, delicious, and convenient morning meal.

Ingredients

Scale
  • 1/2 cup Old-Fashioned Rolled Oats
  • 1 tablespoon Chia Seeds
  • 1/2 cup Milk (dairy, almond, oat, or coconut)
  • 1 tablespoon Creamy Peanut Butter
  • 1 Ripe Banana
  • 1 teaspoon Honey or Maple Syrup (optional, to taste)
  • 1/2 teaspoon Cinnamon
  • 1 pinch Salt

Instructions

  1. Add 1/2 cup of old-fashioned rolled oats and 1 tablespoon of chia seeds to a jar or container. If using cinnamon, add 1/2 teaspoon now and stir to distribute evenly.
  2. Pour in 1/2 cup of milk. Add 1 tablespoon of creamy peanut butter and 1 teaspoon of honey or maple syrup if desired.
  3. Peel the banana. Mash about half of it directly into the liquid in the jar to create a creamy base, leaving the other half sliced for texture.
  4. Stir vigorously with a spoon or spatula until the peanut butter is fully incorporated and there are no dry pockets of oats.
  5. Top with remaining banana slices and seal the lid tightly. Give the jar a gentle shake.
  6. Refrigerate for at least 8 hours or overnight.
  7. In the morning, stir well. Add a splash of milk if too thick. Serve cold or microwave for 30-60 seconds if preferred warm.

Notes

Do not use quick oats or steel-cut oats as they do not achieve the right texture. Ensure you mix thoroughly to prevent dry oats at the bottom. Natural peanut butter may require extra milk due to oil separation. Bananas can brown if left in milk too long; add slices right before eating if meal prepping for multiple days.
