  • 1 cup (240 ml) full-fat canned coconut milk
  • 1 to 2 tablespoons simple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • 1 cup (810 cubes) ice cubes
  • 1/2 cup (120 ml) strawberry juice or a handful of fresh strawberries
  • Optional: squeeze of fresh lemon juice
  • Optional: pinch of sea salt

Instructions

  1. Let frozen açai puree thaw slightly for about 5 minutes until soft but still cold.
  2. Pour 1 cup (240 ml) full-fat coconut milk into a high-speed blender.
  3. Add thawed açai puree and 1/2 cup (120 ml) strawberry juice or fresh strawberries.
  4. Add 1 to 2 tablespoons simple syrup or agave nectar, starting with less and adjusting to taste.
  5. Add 1 teaspoon vanilla extract and 1 cup (8-10 cubes) ice.
  6. Blend on high for 45 seconds to 1 minute until smooth and creamy.
  7. Adjust consistency by adding more coconut milk if too thick or more ice cubes if too thin, then blend again.
  8. Taste and add a squeeze of fresh lemon juice if desired for brightness.
  9. Pour into a tall glass or mason jar and serve immediately.

Notes

Use full-fat coconut milk for best creaminess. Start with less sweetener and adjust to taste. If blender struggles, pulse and stir before blending again. Blend everything except ice if prepping ahead; add ice before serving. Avoid freezing once blended to maintain texture.
