  • 1 cup (90g) rolled oats
  • ½ cup (120g) pumpkin puree
  • ½ cup (120ml) brewed espresso or strong coffee
  • ¾ cup (180ml) milk of choice (whole, almond, or oat milk)
  • ¼ cup (60g) Greek yogurt
  • 2 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)
  • Pinch of salt

Instructions

  1. Brew ½ cup (120ml) of strong brewed coffee or espresso and allow it to cool slightly.
  2. In a mason jar or bowl, combine the cooled coffee, ¾ cup (180ml) milk of choice, ¼ cup (60g) Greek yogurt, ½ cup (120g) pumpkin puree, 2 tablespoons maple syrup, and ½ teaspoon vanilla extract. Stir well until smooth and creamy.
  3. Add 1 cup (90g) rolled oats, 1 teaspoon pumpkin pie spice, 1 tablespoon chia seeds (optional), and a pinch of salt to the wet mixture. Stir thoroughly to evenly distribute.
  4. Seal the jar or container tightly and refrigerate overnight or for at least 6 hours.
  5. In the morning, stir the oats well. If too thick, add a splash of milk to loosen. Adjust sweetness if desired.
  6. Optional: Top with chopped nuts, pumpkin seeds, whipped cream, or extra pumpkin pie spice before serving.

Notes

Use old-fashioned rolled oats for best texture; quick oats get mushy. Cool coffee before mixing to avoid cooking oats. Adjust milk amount for preferred consistency. Store refrigerated up to 3 days. Not recommended to freeze. Optional toppings include nuts, pumpkin seeds, or whipped cream.
