  • 2 pounds ripe plum tomatoes, halved
  • 3 tablespoons extra virgin olive oil
  • 1 medium onion, roughly chopped
  • 4 cloves garlic, peeled and smashed
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups vegetable broth (homemade or low-sodium store-bought)
  • 1/2 cup heavy cream or coconut cream (for dairy-free option)
  • 1/4 cup fresh basil leaves, chopped (reserve a few whole leaves for garnish)
  • 1 teaspoon sugar (optional)
  • 2 cups sourdough bread cubes (day-old bread works best)
  • 2 tablespoons unsalted butter or olive oil
  • 1/2 teaspoon garlic powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper.
  2. Place the halved plum tomatoes cut side up on the baking sheet. Add chopped onion and smashed garlic cloves around them. Drizzle with olive oil, sprinkle with sea salt and black pepper, and toss gently to coat.
  3. Roast the vegetables for 30-35 minutes until tomatoes are caramelized and garlic is soft.
  4. While roasting, heat butter or olive oil in a skillet over medium heat. Add sourdough cubes, garlic powder, and a pinch of salt. Toast, stirring often, until golden and crisp, about 8 minutes. Set aside.
  5. Transfer roasted vegetables and all juices to a soup pot. Add vegetable broth and bring to a gentle simmer over medium heat. Cook for 10 minutes to meld flavors.
  6. Remove from heat and puree the soup using an immersion blender or in batches with a regular blender until smooth and creamy.
  7. Stir in heavy cream and chopped fresh basil. Taste and add sugar if needed. Adjust salt and pepper to taste.
  8. Serve immediately, garnished with whole basil leaves and sourdough croutons.

Notes

If soup is too thick, add more broth to reach desired consistency. Watch croutons carefully to avoid burning. Use fresh basil at the end to keep flavor bright. For vegan version, substitute heavy cream with coconut or cashew cream and butter with olive oil. Gluten-free bread can be used for croutons.
