A comforting, creamy soup that captures the flavors of a cheeseburger using ground beef, cheddar cheese, and dill pickles. This easy slow cooker recipe is perfect for busy weeknights and delivers rich, savory, and tangy flavors.

Ingredients

Scale
  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 medium russet or Yukon Gold potatoes, peeled and cut into ½-inch cubes
  • 4 cups low-sodium beef broth
  • 1 cup dill pickle chips, drained
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1/2 cup heavy cream
  • 1 tablespoon yellow mustard or Dijon mustard
  • 1/2 cup pickle brine (liquid from the jar)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

  1. Dice the onion, mince the garlic, and cut the potatoes into small, uniform cubes.
  2. Heat a large skillet over medium-high heat. Add the ground beef and break it up with a wooden spoon.
  3. Cook the beef until browned and no pink remains. Drain excess grease if necessary, but leave some for flavor.
  4. Stir in the minced garlic and cook for one minute until fragrant.
  5. Transfer the browned beef and onions into a 6-quart slow cooker.
  6. Add the diced potatoes, beef broth, pickle brine, mustard, garlic powder, onion powder, salt, and pepper. Stir to combine.
  7. Cover and cook on low for 6-7 hours or on high for 4-5 hours, until potatoes are tender.
  8. About 30 minutes before serving, stir in the drained dill pickle chips.
  9. In the last 10 minutes, reduce heat to low and stir in the shredded cheddar cheese and heavy cream.
  10. Stir gently until the cheese is fully melted and the soup is creamy.
  11. Taste and adjust seasonings with salt and pepper if needed. Serve hot.

Notes

Do not add cheese at the beginning of the cook time as it may separate. Always add cheese and cream at the end when the soup is hot but not boiling. For a thicker consistency, mash some potatoes against the side of the pot before adding cheese. This soup is not recommended for freezing due to the dairy content, which may separate upon thawing.
