Creamy Tuscan White Bean and Sausage Soup

A comforting, creamy soup made with white beans, Italian sausage, and rosemary that comes together in under 30 minutes. The natural starch from the beans creates a rich texture without the need for heavy roux.

Ingredients

  • 1 pound Italian sausage (sweet or spicy)
  • 2 cans (15 oz each) white beans (Cannellini or Great Northern)
  • 1/2 cup heavy cream
  • 4 cloves garlic, chopped
  • 4 cups chicken broth (low-sodium)
  • 1 can (14 oz) crushed tomatoes
  • 2 sprigs fresh rosemary
  • 2 tablespoons butter
  • Salt and black pepper to taste

Instructions

  1. Heat a large pot over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and no longer pink. Remove the sausage with a slotted spoon and set aside, leaving the rendered fat in the pot.
  2. In the same pot with the sausage fat, add the butter. Once melted, add the chopped garlic and fresh rosemary sprigs. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  3. Pour in the crushed tomatoes and chicken broth. Scrape the bottom of the pot to release any browned bits. Bring the mixture to a gentle simmer.
  4. Stir in the white beans and the browned sausage. Let the soup simmer uncovered on medium-low heat for about 10 minutes to allow flavors to meld.
  5. Remove the rosemary sprigs. Use an immersion blender to puree about half of the beans directly in the pot to create a creamy texture. Alternatively, ladle out 2 cups of soup to blend separately and return to the pot.
  6. Stir in the heavy cream. Taste the soup and add salt and black pepper as needed. Simmer for another 2 minutes to heat the cream through.
  7. Ladle the hot soup into bowls. Garnish with a drizzle of olive oil or fresh parsley if desired. Serve immediately with crusty bread.

Notes

For a lighter version, use half-and-half or whole milk instead of heavy cream. If using lean sausage, add a tablespoon of olive oil. To freeze, store in airtight containers for up to 3 months; texture may change slightly upon thawing. For a vegetarian version, swap sausage for mushrooms and use vegetable broth.
