Instructions

  1. Clean and dry the seeds: If using fresh seeds, rinse under cold water to remove pulp. Pat dry with paper towels and let air dry for at least 10 minutes to ensure crispiness.
  2. Melt the butter: Microwave the butter in a small bowl until fully melted.
  3. Coat the seeds: In a mixing bowl, combine the dried seeds, melted butter, and vanilla (if using). Toss until glossy. Add sugar, cinnamon, and salt, tossing again until evenly distributed.
  4. Preheat air fryer: Set the air fryer to 325°F (160°C).
  5. Air fry: Spread the seeds in a single layer in the air fryer basket. Cook for 8 to 10 minutes.
  6. Shake frequently: Pull the basket out every 2 minutes and shake vigorously to ensure even cooking and prevent burning.
  7. Check for doneness: Seeds are done when golden brown and smelling nutty. They will crisp up further as they cool.
  8. Cool and store: Transfer to a plate or wire rack to cool completely. Store in an airtight container.

Notes

Ensure seeds are thoroughly dried before cooking to prevent steaming. Cook at a lower temperature (325°F) to prevent the sugar from burning. Shake the basket frequently for even coating. Can be stored in an airtight container for up to 1 week.
