These air fryer chicken wings are unbelievably crispy without deep frying, coated in a savory garlic butter and Parmesan sauce. Ready in under 40 minutes, they’re perfect for game day or a solo snack.

Ingredients

Scale
  • 2 lbs (about 900g) chicken wings, separated into flats and drums
  • 1 teaspoon baking powder (aluminum-free)
  • 1 teaspoon garlic powder
  • ½ teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 3 tablespoons (42g) unsalted butter, melted
  • 4 cloves garlic, minced
  • ½ cup (50g) freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Prep the Wings: If using whole wings, cut at the joint to separate drumettes from flats. Discard wing tips or save for stock. Pat each piece dry with paper towels.
  2. Season the Wings: In a large bowl, whisk together baking powder, garlic powder, salt, and black pepper. Add dried wings and drizzle with olive oil. Toss with hands until evenly coated.
  3. Preheat the Air Fryer: Set air fryer to 380°F (190°C) and preheat for 3-5 minutes.
  4. Arrange the Wings: Place wings in air fryer basket in a single layer without overcrowding. Cook in batches if needed.
  5. Cook the Wings: Air fry at 380°F (190°C) for 12 minutes. Flip each wing with tongs, then cook for another 10-12 minutes until golden brown and crispy. Internal temperature should reach 165°F (74°C).
  6. Make the Garlic Butter Sauce: While wings cook, melt butter in a small saucepan over low heat. Add minced garlic and cook for 1-2 minutes, stirring constantly, until fragrant but not browned.
  7. Add the Parmesan: Remove saucepan from heat and stir in grated Parmesan until melted into a thick sauce.
  8. Toss the Wings: Transfer hot wings to a large bowl. Pour Parmesan garlic butter over them and toss gently with tongs until coated. Sprinkle with fresh parsley if using.
  9. Serve Immediately: Transfer to a serving platter and enjoy while hot and crispy.

Notes

Dry wings thoroughly for maximum crispiness. Do not skip the baking powder. Work in batches to avoid overcrowding. Watch garlic carefully to prevent burning. Toss wings in sauce while hot. Use a meat thermometer for doneness.
