  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

  • ¼ teaspoon cloves
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar (for coating)
  • 1 teaspoon cinnamon (for coating)

Instructions

  1. Pour 2 cups of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to low and simmer for 20-25 minutes until reduced by half to 1 cup of syrup. Let cool completely.
  2. Preheat oven to 350°F (175°C). Grease a 6-cavity donut pan generously with non-stick spray or butter.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. In a separate bowl, whisk melted butter, cooled reduced apple cider syrup, granulated sugar, eggs, and vanilla extract until smooth.
  5. Pour wet ingredients into dry ingredients and gently fold together with a spatula until just combined. Do not overmix.
  6. Spoon batter into prepared donut pan, filling each cavity about ¾ full.
  7. Bake for 10-12 minutes until golden brown and a toothpick inserted comes out clean.
  8. Remove from oven and let cool in pan for 5 minutes, then transfer to a wire rack to cool for another 5 minutes until warm.
  9. Mix ½ cup sugar and 1 teaspoon cinnamon in a large bowl. Toss warm donuts in the mixture to coat evenly. Serve immediately.

Ensure the apple cider is reduced to a syrup to concentrate flavor and remove excess water, which prevents dense donuts. Do not overmix the batter to avoid tough texture. Donuts are best served warm so the sugar coating adheres properly. Can be stored in an airtight container at room temperature for up to 2 days or frozen for up to 3 months.
