Ingredients

Scale
  • 1.5 lbs fresh green beans, trimmed and cut into 2-inch pieces
  • 4 tablespoons unsalted butter
  • 2 large yellow onions, thinly sliced
  • 1/2 cup all-purpose flour (for sauce)
  • 1 cup all-purpose flour (for onion coating)
  • 2 cups whole milk
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Vegetable oil (for frying)
  • 1/2 cup shredded white cheddar cheese (optional)

Instructions

  1. Wash, trim, and cut green beans into 2-inch pieces. Blanch in boiling salted water for 3-4 minutes until crisp-tender, then transfer to ice water to stop cooking. Drain and set aside.
  2. In a medium saucepan, melt 4 tablespoons of butter over medium heat. Whisk in 1/2 cup flour and cook for 2 minutes until light golden and nutty.
  3. Gradually whisk in 2 cups of whole milk. Add Dijon mustard, Worcestershire sauce, garlic powder, salt, and pepper. Cook and stir until the sauce thickens enough to coat the back of a spoon (5-7 minutes).
  4. Heat 1 inch of vegetable oil in a large skillet over medium-high heat to 350ยฐF (175ยฐC).
  5. Toss sliced onions with 1 cup of flour and a pinch of salt until coated. Fry in batches for 2-3 minutes until deep golden brown and crispy. Remove with a slotted spoon and place on a wire rack to drain. Sprinkle with salt.
  6. Preheat oven to 375ยฐF (190ยฐC).
  7. In a large bowl, combine blanched green beans and the creamy sauce. Mix gently to coat.
  8. Transfer the mixture to a greased 9×13 inch baking dish.
  9. Bake for 15 minutes. Remove from oven and top generously with crispy fried onions.
  10. Return to oven for 2-3 minutes to warm onions, or serve immediately for maximum crunch.

Notes

Pat onions dry before dredging in flour to ensure crispiness. Add fried onions at the very end of cooking to prevent them from becoming soggy. For a gluten-free version, substitute all-purpose flour with a gluten-free blend. For dairy-free, use plant-based butter and milk.
