A quick and delicious snack featuring fresh fruit skewers dipped in a light, crispy batter and fried to golden perfection, served with a tangy honey-yogurt dip.

Ingredients

  • Fresh strawberries, hulled
  • Fresh pineapple chunks
  • Green or red grapes
  • Firm bananas, peeled and cut into thirds
  • Cantaloupe or honeydew melon, cubed
  • All-purpose flour
  • Cornstarch
  • Ground cinnamon
  • Granulated sugar
  • Baking powder
  • Cold water or sparkling water
  • Neutral oil (vegetable, canola, or peanut) for frying
  • Plain full-fat Greek yogurt
  • Honey
  • Fresh lemon juice
  • Vanilla extract

Instructions

  1. Soak wooden skewers in water for at least 20 minutes to prevent burning.
  2. Wash and thoroughly dry all fruit. Cut strawberries, pineapple, and melon into bite-sized pieces. Keep grapes whole. Cut bananas into thirds.
  3. Thread the fruit onto the soaked skewers, alternating colors and sizes for even cooking.
  4. In a shallow bowl, whisk together flour, cornstarch, cinnamon, sugar, and baking powder.
  5. In a separate bowl, whisk cold water or sparkling water. Slowly pour wet ingredients into dry ingredients to form a thin batter (consistency of heavy cream).
  6. Pour about an inch of neutral oil into a heavy-bottomed skillet and heat over medium-high heat to 350°F (175°C).
  7. While oil heats, mix Greek yogurt, honey, lemon juice, and vanilla in a small bowl. Refrigerate until serving.
  8. Dip fruit skewers into the batter, allowing excess to drip off.
  9. Gently lower skewers into hot oil, frying 2-3 at a time to avoid overcrowding.
  10. Fry for 1-2 minutes per side until golden brown and crispy. Use tongs to flip carefully.
  11. Remove fried kabobs and place on a wire cooling rack set over a baking sheet to drain.
  12. Serve immediately while warm, dusted with extra cinnamon sugar if desired, alongside the yogurt dip.

Notes

Ensure fruit is completely dry before dipping to prevent oil splatter and ensure batter adhesion. Use cold liquid for the batter to keep the coating tender. Fry in small batches to maintain oil temperature. If using bananas, handle gently as they are fragile. For a gluten-free version, use a 1:1 gluten-free flour blend. For a vegan version, use coconut yogurt.
