  • 4 bone-in pork chops, about 1-inch thick
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese (freshly grated from a block)
  • ½ teaspoon paprika (smoked or sweet)
  • ¼ teaspoon dried oregano (optional)
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Place a wire rack inside a rimmed baking sheet and set aside.
  2. Pat the pork chops dry with paper towels. Let them sit at room temperature for 10 minutes while you prep the coating.
  3. Set up your breading station. In the first shallow bowl, place the melted butter. In the second bowl, mix the panko breadcrumbs, grated Parmesan, paprika, oregano, cayenne (if using), and a pinch of salt and pepper. Have a third plate or bowl ready to hold the coated chops.
  4. Season both sides of the pork chops with salt, pepper, and garlic powder.
  5. Brush each pork chop all over with the melted butter using a pastry brush, coating every surface.
  6. Press each buttered chop firmly into the Parmesan-panko mixture, coating all sides. Use your hands to pat the crust on, pressing firmly to create a thick, even layer.
  7. Place the coated chops on the wire rack, leaving space between each one.
  8. Bake for 18-22 minutes, depending on thickness. The crust should be deep golden brown and the internal temperature should reach 145°F (63°C) when checked with a meat thermometer inserted into the thickest part, away from the bone.
  9. Let them rest on the wire rack for 5 minutes before serving.

Notes

For extra golden crust, switch oven to broil for the last 1-2 minutes, watching carefully to prevent burning. Let pork chops sit at room temperature for 15-20 minutes before coating for more even cooking. Use a meat thermometer for perfect doneness every time. If you don’t have a wire rack, place chops directly on the baking sheet and flip halfway through cooking.
