  • 1/4 cup (15 g) fresh parsley, finely chopped (optional)
  • Salt and freshly ground black pepper, to taste

  • For the garlic herb yogurt dip:
  • 1 cup (240 ml) plain Greek yogurt (use dairy-free coconut yogurt if needed)
  • 1 clove garlic, finely minced
  • 1 tablespoon fresh dill or chives, chopped
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Grate the zucchini using a box grater or food processor into a large bowl and let it sit for a few minutes to release moisture.
  2. Place the grated zucchini into a clean kitchen towel or cheesecloth and twist/squeeze firmly over the sink to remove excess water.
  3. In a large bowl, combine the squeezed zucchini, grated Parmesan, eggs, flour, minced garlic, and chopped parsley. Season with salt and pepper and stir until well combined but still a bit loose.
  4. Heat about 2 tablespoons of olive oil in a non-stick skillet or cast iron pan over medium heat until shimmering but not smoking.
  5. Using a heaping tablespoon, scoop the batter into the pan and gently flatten to form 3-inch rounds. Cook for 3โ€“4 minutes on each side until golden brown and crisp. Work in batches to avoid overcrowding.
  6. Transfer cooked fritters to a plate lined with paper towels to drain excess oil and keep warm in a low oven if needed.
  7. Prepare the garlic herb yogurt dip by stirring together Greek yogurt, minced garlic, chopped herbs, lemon juice, salt, and pepper in a small bowl. Chill until serving.
  8. Serve the fritters immediately with a generous dollop of the garlic herb yogurt dip.

Squeeze out as much water as possible from the zucchini to ensure crispiness. Use freshly grated Parmesan for best texture and flavor. Heat oil to medium temperature to avoid burning or sogginess. If batter is too wet, add an extra tablespoon of flour. Flip fritters only when edges are set and golden. The garlic herb yogurt dip can be made ahead and chilled to deepen flavors. For a lighter version, bake at 400ยฐF (200ยฐC) for 20 minutes, flipping halfway.
