A hearty salad featuring roasted delicata squash with a crispy, chip-like exterior, tossed with mixed greens, cranberries, walnuts, and feta cheese in a balsamic vinaigrette.

Ingredients

Scale
  • 1 medium delicata squash, cleaned and sliced into 1/4 inch half-moons
  • 2 tablespoons avocado oil or light olive oil
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 cups mixed greens (baby spinach or arugula)
  • 1/4 cup dried cranberries
  • 1/4 cup toasted walnuts
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat oven to 425°F (220°C) and let it fully preheat for at least 10 minutes.
  2. Wash the delicata squash, cut off ends, slice in half lengthwise, scoop out seeds, and slice into 1/4 inch half-moon strips.
  3. Pat squash slices dry with a paper towel.
  4. In a large bowl, toss squash with oil, then sprinkle with flour, smoked paprika, garlic powder, salt, and pepper. Toss until lightly coated.
  5. Line a baking sheet with parchment paper and spread squash in a single layer without overcrowding.
  6. Roast for 20 minutes, then flip each piece and roast for another 15-20 minutes until edges are crispy and caramelized.
  7. While squash roasts, combine balsamic vinegar, olive oil, maple syrup, and Dijon mustard in a mason jar and shake to emulsify.
  8. Toast walnuts in a dry skillet over medium heat for 2-3 minutes until fragrant.
  9. In a large serving bowl, combine mixed greens, roasted squash, cranberries, toasted walnuts, and feta.
  10. Drizzle dressing over the salad just before serving and toss gently to coat.

Notes

For extra crispiness, ensure squash slices are dry before oiling and do not overcrowd the baking sheet. The flour helps draw out moisture. If using other squashes like butternut, peel them first and cube into 1-inch pieces. Store roasted squash and dressing separately from greens to prevent wilting.
